Description

With all of the fresh strawberries around this summer, you must try this cobbler. It's not your traditional biscuity cobbler. It's more of a delicious cake-like cobbler that you won't be able to stop eating...okay, maybe that's just me :)

RECIPE

Vegan Strawberry Cobbler:

1/2 cup vegan margarine
3 cups fresh strawberries, sliced (less than 2 pints)
2 tablespoons balsamic vinegar
2 tablespoons granulated organic sugar
1½ cups all purpose flour
1 ½ cups sugar
2 ¼ teaspoons baking powder
¾ teaspoon salt
1 ½ cups non-dairy milk
1 ½ tablespoons vanilla extract

1. Put 1/2 cup of vegan margarine in an 8x8 metal baking pan.

2. Place the baking pan in the oven and preheat it to 375. It took me 15 minutes to melt the margarine, so if you do it in the beginning, once everything is else is ready, the margarine should be completely melted.

3. Mix strawberries, sugar and Balsamic vinegar together and set aside.

4. In a large bowl, mix together the flour, sugar baking powder and salt.

5. Pour in milk and vanilla extract and stir until it's smooth.

6. Drain the strawberries well.

7. Remove the baking pan from the oven.

8. Pour in the batter. Don't stir it.

9. Spoon in the strawberries.

10. Bake it for 1 hour.
