TOASTER PASTRIES RECIPE: 
Serves: 8 – 10
Cook time: approximately 2 hours

Toaster Pastries Ingredients:
2 cups all purpose flour
1 1/2 tablespoons sugar
1 tsp. salt
2 sticks unsalted butter, chilled and cubed
2 tablespoons milk
2 eggs (1 for the dough, 1 for the egg wash)
¾ cup thick jam
1 cup powdered sugar
1 ½ tablespoons milk
1 tsp. vanilla colored sprinkles

Preparation: 
In a food processor, combine the flour, sugar, and salt. Pulse the machine a few times to sift the dry ingredients. Add the cubed butter and turn on the processor on until the mixture resembles large grains of sand. Remove the lid and check the texture of the mixture. You should still be able to see bits of butter in the flour. In a small bowl, whisk one egg with 2 tablespoons of milk. Add the egg mixture into the processor. Turn the processor on for around 15 seconds until it just comes together and form a ball in the bowl. Do not over mix or your dough will toughen. Remove dough from machine and divide into two disks. Refrigerate for 30 minutes or up to two days.

In the meantime, line a cookie sheet with parchment paper. On a floured surface, roll out one disk of the dough to 1/8 of an inch thickness with a rolling pin. Using a circle cutter, cut bases for the toaster tarts and place on lined cookie sheet. Once all the bases are cut, whisk one egg and brush over all the cut pastries. Place 1 to ½ tsps of jam onto each circle on the sheet. Set aside. Roll out the 2nd disk of dough. These will be the tops to your toaster pastries. Place each circle on top of the circles with jam. Brush tops with egg wash. With a small fork, crimp around all of the edges. With a toothpick, poke a few holes into the top of each toaster pastry. Place the tarts in the refrigerator for 30 minutes. Preheat the oven to 350. Bake for around 30 minutes until tarts are a golden brown.

While cooling, combine the powdered sugar, milk and vanilla. Glaze each tart and decorate with sprinkles.
