Lightbulb Nutella Mug Cake - Gluten Free!

Nutella is this chocolate hazelnut spread that I believe started out as German but is now pretty common here in the US. All of the other ingredients are probably already in your cupboards. I suspect that if you're not a nutella fan, you could probably use the Reese's Chocolate Peanut Butter instead.

    Here is the recipe:
    Ingredients:

    • 1 egg
    • 2 tbsp nutella
    • 1/8 tsp vanilla extract
    • 1/2 cup almond meal
    • pinch of salt
    • 1 tbsp peanut butter chips or chocolate chips

    Directions:

    1. Crack an egg into a large pour-able mug or measuring cup. Whisk it for a minute, until lightly foamy.
    2. Add nutella and whisk until smooth.
    3. Drizzle in vanilla extract and stir to combine.
    4. Add almond meal and pinch of salt. Stir to resemble a thick smooth batter.
    5. Evenly distribute batter into one extra large microwave safe mug (or two medium mugs), by layering a few peanut butter or chocolate chips in between.
    6. Fill mug half full. Do not fill it more than half to avoid overflow.
    7. Microwave for 30 seconds. And if batter doesn’t overflow, add another 30 seconds. The whole microwaving process should be for a total of 1 minute. Be watchful during this process.
    8. Mug and cake would be extremely hot. Allow to cool for a few minutes before serving.

I tried this myself just today and it is amazing! I highly recommend it. The blog it's in mentions that many mug cakes are dry and she's right but this one definitely isn't. It's fast to make with easy ingredients and tastes amazing! I highly recommend it for your sweet tooth cravings.

I love mug cake recipes that are actually good. They allow us to have desserts without the leftovers that I don't need sitting around tempting me. I love anything that's individual serving and that I can potentially make for the kids without eating it myself.
